Here’s a new one that will have the whole of Brussels and beyond salivating! A few days ago, the team at Biga pizzeria – located in Schaerbeek – celebrated a great source of pride. Nicola Falanga, the artisan behind the restaurant’s pizza dough, was crowned Best European Pizza Maker. The event took place in London, at the prestigious European Pizza Show. The chef of this small, committed pizzeria in Place Colignon won in the contemporary category. The recipe for Europe’s best pizza? It’s all about taste, advanced technique and a sense of ingredients. Thanks to this accolade, the establishment now finds itself in the European spotlight.
The contemporary pizza that won over the jury
Nicola Falanga’s creation, which won over the jury, sums up Biga‘s approach and philosophy. To make it, the pizza maker used his famous signature dough, meticulously crafted from ancient grains and wholemeal flours, then matured for a long time to reveal all its finesse. This dough was also particularly well moisturized, the fruit of know-how that combines patience and constant research.

Nicola Falanga then imagined a sophisticated yet perfectly clear garnish, based on three different tomato sauces. There was also a Piennolo fermented tomato water delicately applied with a spray, a crunchy pesto for texture, and a light bufala mousse for an airy touch. Our mouths are watering!
Slow Food commitment pays off for Europe’s best pizza
This sought-after blend was both readable and resolutely contemporary. What’s more, the pizza reflected the values that guide the pizzeria’s day-to-day operations, such as respect for Slow Food and the rigorous selection of sustainable ingredients. The plate stood out for its surprising originality, thanks in particular to the famous airy buffalo mousse, which added elegance, a new texture and a strong visual signature. It was this element that largely contributed to the final verdict. This award is concrete proof that this daily commitment – shared in good humor and rigor – has found a powerful echo beyond Belgian borders! Bravo e buon appetito!
