At Bruxelles Secrète, we’re big fans of cooking. So it’s no surprise that we’re bringing you this super-fast recipe for the famous and traditional Flemish carbonade! Made with pieces of stewed beef cooked in Belgian beer, this typical Belgian dish can even be served with French fries!
Serves 4 | Preparation: 30 min | Cooking time: 1 hour
Ingredients
- 1 kg beef (bourguignon)
- 60 cl Belgian dark beer
- 2 carrots
- 2 onions
- margarine
- 2 tbsp. flour
- 2 tbsp balsamic or sherry vinegar
- 4 tbsp. brown vergeoise
- mustard
- 1 bouquet garni of thyme and/or bay leaf
- Gingerbread (yes, yes!)
- salt and pepper
The recipe
Cut the meat into cubes, about 3 cm by 2 cm .Peel the carrots and onions, then cut them into strips.
Brown the margarine in a casserole dish, then add the meat over a high heat, stirring regularly to ensure it is cooked through.
Add the carrots and onions. Add the 2 tablespoons of flour to prevent the mixture from sticking. Then mix again.
Pour the beer into the mixture, then leave on a high heat until it boils. Season to taste with salt and pepper.
Add 2 tablespoons vinegar, 4 tablespoons vergeoise and the bouquet garni. Simmer for 15 minutes. Spread 4-5 slices of gingerbread with mustard and add to the mixture.
Simmer for a further 30 minutes, stirring occasionally. Serve and you’re ready to go!
