The verdict was announced just a few days ago in Las Vegas at the end of a four-year culinary marathon. The final of the Gelato Festival World Masters, which brought together the 34 best gelato makers from around the world, crowned Brussels native Christian Wu. Among the 3,500 participants in the global qualifiers, it was Belgium that ultimately shone, once again.Spain and the Netherlands rounded out the podium, confirmingEurope’s dominance inthe art of gelato this year.
It was with his daring creation, “Il bosco dei cento acri” (The Hundred Acre Wood), that the Belgian artisan made his mark. Already crowned 2024 Belgian champion with this same flavor, he once again transported the jury into his world. His recipe is a feat of balance: a base of honey ice cream infused with Scots pine and young shoots, enhanced by a crumble of porcini mushrooms and accompanied by a lemon-honey marbled ice cream.
