Ingredients
(For information, we based our recipe on waffles for +/- 6 people).
- 250 g flour
- 100 g melted butter
- 15 g baker’s yeast
- 3 eggs
- 375 ml milk
- 1 teaspoon sugar
The recipe
Crumble the baker’s yeast into a bowl and mix with a little warm milk. Add powdered sugar and mix. Leave to stand for a few minutes.
Separate the egg whites from the yolks. Using an electric mixer or whisk , beat the egg whites until stiff. Set aside.
Pour the sifted flour into a bowl. Make a well in the center and pour in the remaining warm milk. Mix vigorously with a whisk.
Add the egg yolks, melted butter and dissolved yeast. Mix well. Gently fold in the egg whites with a spatula. Cover the bowl and leave to rest for 45 minutes.
Heat the waffle iron. Pour a ladleful of batter onto the plates and cook for a few minutes. Repeat until all the batter is used up.
Enjoy the Brussels waffles while still warm.
