For its 10th edition, Gault&Millau’s “Finest Chocolatiers” selection reviewed 145 chocolatiers, representing no fewer than 207 establishments in Belgium and Luxembourg. Among them, four awards were presented: three “Chocolatiers of the Year” for Flanders, Brussels, and Wallonia, as well as a “Discovery of the Year.” In Brussels, the title went to a shop that has been in business since only 2025 .
A chocolatier based in the Sablon since 2025
The Brussels winner is Arthur Amblard. Trained in baking and pastry arts and later at CERIA, he worked notably at Oberweis in Luxembourg and with Arnaud Champagne in Ittre before opening his own shop in the Sablon neighborhood in 2025. Gault&Millau highlights his particularly personal approach, featuring a line of products made without added sugars.
This unique approach stems largely from his family history: since his father has diabetes, Arthur Amblard chose to replace refined sugar with xylitol. For him, this constraint has become a true canvas for creativity, featuring combinations such as yuzu or sesame with fleur de sel.
A selection that also highlights single-origin chocolate
Beyond the Brussels winners, this 10th edition also offers a glimpse into current trends in the industry. Gault&Millau notes, in particular, a growing interest among artisans in single-origin chocolates, chosen for their aromatic profiles linked to the terroir of the beans, as well as for less conventional ingredients, particularly those from Asia.
The guide made its selection after several blind tasting sessions, evaluating aspects such as appearance, taste, texture, finish, creativity, and presentation. The complete selection is now available online, while the various awards will also be featured in the upcoming annual restaurant guide, scheduled for release on November 9.
