When the heat sets in, all we want is fresh, simple and tasty recipes. And just in time, Cyril Lignac shares his spicy version of guacamole, ideal for an aperitif with friends. With its hint of Espelette pepper, this summery recipe will have your taste buds traveling in the blink of an eye.

Cooking time: 6 minutes
Ingredients for 4 servings:
- 200 g avocado (or the flesh of an avocado)
- 100 g peas
- 10 g coriander leaves
- 1 organic lime
- 1/2 teaspoon Espelette pepper
- green Tabasco
- fine salt
Step 1
Wash and chop the coriander leaves . Keep a few for the final presentation of your guacamole.
Step 2
In a saucepan, cook the peas in salted boiling water for 6 minutes. Drain.
Step 3
In a salad bowl, combine the avocado flesh, Espelette pepper, cooked peas, chopped coriander, lemon juice, finely grated lime zest and salt. Then start mashing with a fork. Check the seasoning for salt and pepper. If missing, add more lemon and green Tabasco.
Step 4.
Serve your spicy guacamole in bowls, and decorate with coriander leaves. Top with lime zest for presentation, and a few tacos if you have any to hand. Enjoy!
