Brussels has clearly not slowed down on the food front this year. From the meticulously crafted dishes at Ralph to the more festive vibes at Cosmos, not to mention the unapologetically cool vibe at Munch, the understated elegance of The Vault, and the Japanese-inspired cuisine at Mizaru, the new wave of Brussels restaurants is definitely making a name for itself. Here are five recent openings to try before everyone else.
Cosmos
It’s the gourmet opening that’s currently electrifying Place de Londres. At the helm, chef Kevin Perlot ( formerly of Vertige, and also with experience at L’Air du Temps and Bon Bon) presents an ultra-seasonal cuisine centered on vegetables and seafood, in an organic setting as meticulously curated as the dishes themselves. Expect precise, vibrant, and incredibly fresh dishes . The kind of spot people are already whispering about.
Mizaru
In Kraainem, Sanzaru’s little sister is leaving fine dining behind to reinvent the Belgian brasserie with a serious Asian twist. On the menu: ultra-comforting classics subtly enhanced with miso, kombu, or furikake, in an elegant yet unpretentious atmosphere. The result? A playful, generous cuisine that’s addictive enough to fill the dining room from day one.
Ralph
At Châtelain, Ralph turns up the heat with contemporary Mediterranean cuisine largely cooked over a wood fire. In an impeccably stylish setting that blends chic bistro and laid-back fine dining, the large cuts of meat (notably a T-bone that’s already a cult favorite) arrive without frills, accompanied by authentic Belgian fries cooked in beef fat. A spot designed for meat lovers, yet with enough style to appeal to everyone at the table.
The Vault
Tucked away in the basement of La Pharmacie Anglaise, The Vault plays the card of a cozy speakeasy where people come as much for the cocktails as for the meticulously prepared small plates. Wasabi tempura oysters, sea bream ceviche, or confit pork belly: the menu strikes a balance between comfort and sophistication in a subdued atmosphere perfect for extending the evening away from the hustle and bustle of Brussels.
Munch
In Saint-Gilles, Munch is already establishing itself as the neighborhood’s new cool hangout with its ultra-comforting Asian street food. The star of the house? The roujiamo, a Chinese burger in a crispy puff pastry bun, available with pulled pork, hoisin duck, or in a veggie version. Add some tangy dumplings and caramelized wings, and you’ve got a simple, awesome, and dangerously addictive spot .
