Mum-in-law wants a tartiflette and Dad-in-law wants a raclette… Just as you’re feeling the anxiety attack coming on, you have a revelation… BAM! Raclette is obviously the ideal combo to reconcile the family and get everyone on the same wavelength. Your evening is saved. You’re welcome.
Racliflette: when raclette meets tartiflette!
Ingredients for 4 guests
- 1 kg potatoes
- 150 g pancetta
- 1 large onion
- 10 cl dry white wine
- 1 small jar heavy cream
- Ten slices raclette cheese
Steps to follow
Preheat your oven to 180º. Once done, peel your potatoes and cut them into fairly thick cubes. Steam them for a good ten minutes. They should be tender, but not so tender that they crumble.
While the potatoes are cooking, finely chop the onion and sauté in olive oil until tender. As it cooks, turn up the heat and add the pancetta so that it browns lightly, and the wine for flavor.
Once everything is cooked, place half the potatoes in a large gratin dish and cover with the pancetta-wine mixture. Following the same procedure as for the lasagne, add a generous tablespoon of crème fraîche and slices of raclette cheese to cover the potatoes.
Repeat the process until you run out of potatoes and crème fraîche. The last layer of your preparation must absolutely be raclette cheese, so that your dish is gratinated! Put the whole thing in the oven for around 30 minutes, and it’s ready!
