Ingredients for 6 servings
500 g Philadelphia cream cheese
250 g speculoos
125 g heavy cream
125 g butter
125 g sugar
2 eggs
1 tsp vanilla
1 tsp. lemon zest
Preparation
1. Blend speculoos to a powder.
2. Place the powder in a bowl, pour in the melted butter and mix.
3. Place the mixture in a pastry ring or tart tin. Spread the mixture evenly with a spatula, until compact. Leave in a cool place for 30 minutes.
4. Meanwhile, prepare the cheesecake base, mixing the fromage frais (Philadelphia), heavy cream, eggs, sugar, lemon zest and vanilla.
5. Pour this mixture over the cooled cheesecake base and bake at 170°C for around thirty minutes.
6. After baking, store and enjoy chilled.
