After winning over Brussels’ meat lovers, Colonel is changing course and taking inspiration from Japan for its new address. The name? Taisa, a robatayaki bar where fire becomes the soul of the kitchen. Expected to open on November 3, it promises as much warmth as gustatory surprises.
The sacred fire of robata
A stone’s throw from Colonel Louise, a new chain will soon be opening its doors. It’s Taisa, the latest addition to the Colonel family. No classic steakhouse here, but a robatayaki bar, a Japanese grill where the flame sublimates each ingredient. Inspired by a trip to Japan by Colonel’s founders, the place will blend Brussels know-how and Japanese spirit. The binchotan charcoal, imported for the occasion, promises fine cooking, where meat, vegetables and seafood take on smoky, delicate aromas.
Between bar and table d’hôtes
Neither quite a restaurant nor quite a bar, Taisa boasts a friendly, relaxed atmosphere. You can sit at the counter and watch the embers dance, glass in hand, or extend your evening on the terrace when the weather permits. The à la carte menu features small plates to share and house cocktails designed to play with the roasted flavours of the robata. Chef Florent Tintignac, already at the helm of Colonel Louise and Fort Jaco, creates a cuisine of fire and contrast.
A Japanese version of the Colonel spirit
