From November 14 to December 7, Belgian chef and former Top Chef contestant Paul Delrez takes the helm at Double Standard, the restaurant in The Standard hotel. An ephemeral experience where generosity, audacity and emotion are enjoyed in equal measure.
When a hotel becomes a culinary playground

Forget the over-zealous hotel diner: the Standard Bruxelles is about to vibrate to the rhythm of the pop-up by Paul Delrez, former Top Chef contestant and free electron of the Belgian gastronomic scene. For three weeks, the first floor of the new establishment will be transformed into a living table, part cosmopolitan bistro, part festive canteen. There’s no protocol here: people come to eat, laugh, share and be surprised.
A kitchen with an open heart

True to his reputation as an instinctive cook, Paul Delrez imagines a menu where raw flavors rub shoulders with precise gestures. Grilled leeks with hazelnut crumble, braised beef cheek sandwich, clams with nduja butter… dishes that exude human warmth and sincerity. Everything is designed for immediate pleasure, from comfort food revisited to seasonal daring. The chef claims that his cuisine is “emotional but never pretentious”, designed to nourish the body as well as the spirit.
