When it comes to gastronomy, Brussels has never been afraid to dare! And the proof comes this month in Auderghem with the opening of Oxalis, the country’s first school of vegetarian cuisine. A place conceived as a gourmet laboratory where you can learn, experiment and share a cuisine resolutely turned towards the future.
A first in Belgium
Here, the rigid codes of traditional hotel schools are abandoned! Oxalis is the very first vegetarian cooking school in Belgium. The official opening is scheduled for September 11 in Auderghem, and it will welcome both curious enthusiasts and professionals in search of new inspiration. Behind the project is chef and educator Corentin Crutzen, who has already trained hundreds of Brussels gourmets in animal product-free cooking. His credo is to make gastronomy sustainable, creative and accessible.
A lively, creative cuisine
Far from the clichés of bland dishes, Oxalis takes a joyful, daring approach. Vegan barbecues, revisited sushi, vegetable versions of cochonnailles, pastries without butter or eggs… Here, every workshop is a promise of discovery and gustatory surprises. A dozen instructors – specialists in fermentation, plant-based baking and living foods – pass on their know-how with the aim of opening up new gourmet perspectives. And even children will have their place, thanks to fun parent-child workshops organized on Wednesday afternoons!
A star-spangled patron and a vision for the future
To mark its launch, Oxalis has chosen a prestigious patron. He is René Mathieu, Michelin-starred chef and pioneer of plant-based gastronomy. His support illustrates the school’s ambition. To participate in the evolution of the Belgian culinary landscape and train the new generation of chefs in “the cuisine of the future”. While one in three Belgians already makes vegetarian meals a regular part of their daily routine, Oxalis aims to turn this trend into a sustainable movement – turning Brussels into a veritable laboratory of vegetarian taste.
